3 large or 4 small eggs whisked
1 c. unsweetened applesauce
3 c. sugar
6 c. grated zucchini
1 tsp. vanilla
1 1/2 Tbsp. of cinnamon (you can adjust to taste)
3 c. flour all-purpose
3 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
Pre-heat oven to 350° F.
Wisk and mix the following ingredients one at a time; eggs, applesauce, sugar, zucchini, vanilla, and cinnamon. Next sift remaining dry ingredients together and add a little at a time to the liquid, stirring until it is well mixed. Pour into greased loaf pans or tins (I use baking spray). Place in the oven for approximately 50 minutes, depending on the size of loaf and oven. It could be 40 minutes or so for smaller loaves.
This will produce 2 to 3 loaves depending on the size of your loaf pans. If you make 2 loaves and cut them into 10 slices, it will be approximately 165 calories per slice. If you make 3 smaller loaves and slice them into 10 pieces, they should be approximately 110 calories a slice.
For me it beats any of those pre-packaged little cakes and a warm slice is a bit like a hug. Plus, our zucchini have taken over the garden, so there's that! If you have zucchini overflowing in your kitchen you can do what I do and spend a few hours baking. Today I made 18 loaves. I let them cool, slid all but 2 into gallon freezer bags, and then froze them. Trust me, in the middle of winter when you're out of ideas for dessert, take one out of the freezer and let it thaw or zap it for a few seconds in the microwave. You'll be so glad you didn't toss those extra zucchini!
